Holy yummy moist sweet fish on a light bun fun! This recipe is so easy and light you really need to try it out. Take some olive oil and coat the fish and then sprinkle it with salt and pepper. That's it! Then you grill them 5 minutes on each side. These will melt in your mouth with sweet juicy flavor.

I'm so glad that I can get home in time for the sunlight to get a run in. The perfect temperatures have been spoiling me and if that doesn't make me want to get out and lace up NOTHING WILL.

Smoked Trout over Farro Salad

Trout is one of my favorite fish to eat. The swiss chard at the market looked inviting so I wanted to try this combination out. I have a question about Swiss Chard, is this a vegetable the swiss came up with? It's not what I was expecting. It looks colorful but tastes nothing like chocolate. This recipe is also one that has so much texture it will give your mouth a work out. Look for the ingredients in February's Food and Wine Magazine.

The hardest part about the morning is the cold because I don't like getting out of the warm bed. The best invention is the heater for the shower room. I'm so glad I don't have anything to shovel before I hit the road. On the drive in I noticed the grass looks more like dried fettuccine than lawn.

I Come From The Water

What defines me as a food blogger and makes me unique?
Food is the one constant in my life. Every day I eat and sometimes I dream of running off to live in Italy to cook for tourists in a tiny village. Then I wake up to reality and realize I already have a great life here. Living along the Florida Gulf Coast I get the added bonus of catching and cooking up the local daily fresh catch whenever I want. This means I can fillet fish in under 2 minutes and would probably live on an island very well if I ever got stranded. My friends and I like to pull our resources together and have fish fries and clam bakes on the beach to enjoy the sunsets. Simple clean eating is ideal for me and I don't fuss on too many ingredients or hard to find items. Once you've had freshly caught fish or seafood it is really hard to enjoy it any other way. The flavors melt in my mouth like butter and each fin and shell has a unique texture to savor.

Look at all the empty tables in a normally busy Westshore area. Right about this time of year temperatures get down right steamy and I notice few people outside until the sunset. When I see a convertible with the top down in the sunlight I'm sure they must be from Canada. As I head inside to the cool dark bar I move along to the back, away from the sunlight and order a chilled glass of white wine from the list.

Foodbuzz 24X24: Gulf Coast Cuisine Dinner Party

As one of the Foodbuzz: 24 X 24 Gulf Coast Ambassadors, last night it was my privilege to participate and showcase the cuisine of the Gulf Coast region. This event was held in St Pete, Florida at my friend Jennie's house with the proceeds going to the Greater New Orleans Foundation thanks to Foodbuzz with the focus on helping fishermen and their families in the area who have been subjected to the fallout from the BP oil disaster since April 20, 2010.

The stakes have been devastating to every single state along the Gulf Of Mexico and nobody knows if there will be much of a future for inhabitants or residents of the area. There is a darkness that looms in our offshore waters and the oil invasion is currently taking a heavy toll on all of us living in the coastal regions.

Tracking the Oil Gush Disaster in Google Earth

Like most everybody, I have been watching with horror as the events in the Gulf of Mexico have been unfolding over the last 50 days. Lately I have been using technology to make the most sense of what is actually going on out there. You can get the latest maps and Google Earth layers as well as watch YouTube videos and get the latest news.
