The thought of running until I ran out of steam crossed my mind more than a few times. Last weekend I bought a juicer and it was the best purchase decision this month. Frozen Chocolate Bananas

Using one banana can make all the difference to curb my chocolate addiction. Start by melting 2 T of semisweet chocolate in the microwave. Slice up the banana and roll each piece in the chocolate and cover as much as desired. Then freeze them for 15 minutes tops. These bites had a nice chocolate shell on the outside and the texture of soft marshmellow on the inside. I found this on Angie's site but I simplified it even more. Doesn't she have the best?

Coconut Rice Pudding with Lady Apples

I hope you are enjoying your weekend. Last night we brought home a Christmas tree and today we have been stringing lights and decorating the house. This cold weather makes me want to cook warm food to go with the festivities; therefore, I made coconut rice pudding. It involved stirring Arborio rice with whole milk and coconut milk. In addition I added half cup of sugar for sweetness and a vanilla bean for flavor. For the final touches I topped each with tangy lady apples and a pinch of brown sugar. The combination was superb!
