Warm Banana Bread

It's been cold and I love to crank the oven with baked goods on these occasions. You know what else I like? Finding a few bananas on the counter past their point of eating natural. Also, save the peels for other plants that need a little food of their own. All the gooey goodness from the inside of these skins is going to be stuffed in bread.

The brown spots make them perfect for using in this recipe.

I mix the wet and dry ingredients and already the sweet smell of ripened bananas with sugar and vanilla is calling the neighbors.

1/2 cup butter
1 cup sugar
2 eggs
3 bananas finely crushed
1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 t vanilla

Bake at 350 for 50 - 60 minutes. Keep a close eye on your oven. The aroma of bread baking is enticing everyone in the house.

Don't throw away the peels in the trash. Use them in the garden to feed the plants like stag horn ferns and other items that hang in the air. The cold weather at night has been hard on the staghorn fern.

I think it's time to bring it in until the spring. It gets more attention inside the house anyhow.
