Fall weather is in the air and I love to get outside and do things all day ...including grilling dinner. Sometimes the best intentions take a slight wrong turn.

Let me start from the beginning.
When I spotted a whole red snapper, I knew I had scored. Then I walked to the beer isle and picked out a few autumn beverages to pair with the nice catch. SO, there I was scribbling the plate du jour on the chalkboard at home when I maybe got distracted enjoying a Imperial Pumpkin beer. While scents of cinnamon and clove mixed with cedar and snapper sizzling in the background, everything appeared to be going swimmingly.

Then, when we checked it, we were astonished to uncover this.

Dont panic! We worked hard on this dinner.

Save the fish.
We scooped the snapper off with a big spatula and nobody got burned.
All in all the red snapper was sweet, nutty, and ever so slightly crunchy skin melted into the perfect bite.

I doubt I'll ever live this one down.
