Roasted Cauliflower in Lemon Tahini Sauce

My dog was upset at the noise last night so I knew something was up. Last night I spent most of the hours walking around the family room looking for leaks. I'll let you know that before I made it to the light switch I squished my way into the room. The roof leaked in the past and I had gotten estimates over a couple days ago. We planned to have a new one placed on as soon as possible. Then last night Niagara Falls fell on the little house.

It's a good thing I was prepared for this but I was not anticipating the night of leaking rain pouring through the sky lights and soaking my rug. In life, the rain will fall. Now it's raining more than ever. I keep telling myself I have insurance this too shall pass. And it will. But here I am on the floor eating lunch looking up at the ceiling spotting water marks. Those boys need to hurry!

While I wait with bated breath praying for clear skies I made this little lunch I wanted to share with all of you. At my attempt to turn the day around the sauce comes together. Lemon tahini sauce that is. For 15 minutes my mind stopped thinking about the roof and the damage and the cost. 15 minutes is how long it took me to eat this dish and about the same to prepare.

I feel a bit like the singer who lost her umbrella. When the flood gates open again I'll try to be strong like her when Mr. Vine arrives and let him know he can stand under my umbrella. I have some moves to work on until then.

Recipe:
1 head of cauliflower
olive oil
2 cloves of garlic
2 T Tahini
1 T lemon juice
salt
parsley for garnish

Preheat 425 degree oven. Mix olive oil and salt then roast cauliflower. Combine the rest of ingredients on stove top and whisk in pan.
