Double Dog Dare

This is the time of year when I've replenished my freezer with fresh catch from the weekends. Then I simply reach for something fantastic out of the freezer as I choose.

Take the ice and pour rum, pineapple juice and orange juice into a cocktail shaker. This is one of the most humid summers I can remember. I'm thinking of permanently leaving my freezer door open and standing in front of it.
Saute scallions and slice up the avocados. I prep the fish and tacos with spices and breadcrumbs. Pour a little EVOO in the pan and sear the fish until golden brown on 2 sides.

I'll finish chopping the toppings for the tacos such as lettuce, tomatoes, and cilantro. What makes these special is the sauce of mayo with a lime half squeezed in and cayenne pepper sprinkled in. Then toast the shells.
After dinner we took a walk around the neighborhood and then it was bath time.
