Taco Thrills

I'm a sucker for tacos. Ever since I was a kid and one of my older brothers took me to Six Flags I've had fun memories of this food and theme parks. We rode the roller coaster until we were dizzy and then he said, "I'm hungry, wanna get some tacos ?" Seemed like a good idea; though, I'd never tried one before. Apparently, I led a sheltered life as a teen. I ordered two and had no idea how big they would be or if I would even like them. I inhaled the hand held crunchy treat and knew at first bite I severely underestimated my taste for tacos. We soon headed right to the log flume ride. Mid-way through the ride I shouted, I'm gonna need more of those tacos. I. was. hooked.

I have never abandoned my liking for tacos. Not once. Truth be told, I have a weekly designated taco night. It is as much fun to make them as it is to eat them. There are those who believe they are too much work to prepare. I cannot relate to these people. I've added a few choice toppings to enhance the taco-liciousness and I call this side item cowboy caviar which contains beans, corn, cilantro, tomatoes, and a secret spice.

For the best crunchy tacos the shells should be toasted a few minutes in the oven. I use stand and stuff by Old El Paso because they rock! Pressed for time I use ground turkey for the meat. When I go all out I make a rub for sirloin strips and marinade overnight. For the rub I use: juice of 2 limes, red pepper flakes, cumin, paprika, pepper, jalapeno pepper and salt. Since I make a few things for toppings I'm likely to leave one of them off accidentally. In this case, I forgot the lettuce. let the suffering begin...
